This is one of my grandma’s recipes with a few ingredients. This soup is suitable in winter or any other time. It is believed that after childbirth, mothers lose warmth from their bodies, specifically bodily fluids, so pig stomach soup is believed to help with that. It keeps your stomach warm, contains protein and nutrients. Please check this video on how to clean and cook this pig stomach (hog maw) soup. 📍INGREDIENTS ➡️PART A: SOUP *2 small pig stomach (approx. 2 lbs) *2 pieces chicken breast/lean pork *1 tbsp (10g) white peppercorns *1 tsp salt *10 cups (2.5 liters) water ➡️PART B: CLEANING & BLANCHING *4-5 tbsp salt *¾ cup white vinegar *1 piece Chinese brown slab sugar cane 🔺How to clean pig stomach (hog maw) and remove slime and odor? The ingredients below are for part B (#1-3) and materials (#4-7) that you need: 1) 3 tbsp salt 2) ¾ cup white vinegar 3) 1 piece Chinese brown slab sugar cane 4) Knife 5) Kitchen shears 6) A large pot/wok 7) A pair of gloves (optional) 📍PREPARATIONS 1) Pig Stomachs: 1st rinse pig stomach, sprinkle 3 tbsp salt on both outside and inside, scraping off slime with a knife on both sides. Rinse it at least 3 times with water. Trim off loose/excess fat inside pig stomach, wash with white vinegar and rub both sides for 2-3 minutes and rinse few times with water. With a pot and some water, bring it to a boil, put a piece of brown slab sugar, then pig stomach and blanch for 5-7 minutes with medium high heat. Flip it to other side and ensure both sides are blanched. Remove from the heat and wash both sides for a few times until it’s clean. After blanching, you can easily see the unwanted (white and yellow) parts, you need to remove them. After cleaning, set aside 2) Chicken Breasts: Why did I use chicken breasts? It brings out the soup sweetness, more flavor, is low fat and healthy. Clean by rubbing with salt and trim off excess fat. Remove film and rinse a few times with cold water or until water clears. 3) White Peppercorns: I used 1 tbsp (10g) white peppercorns and gently crushed them. Then transfer to stock pack/filter bag (optional). After everything is prepared, it’s now ready to cook. 📍INSTRUCTION 1) In a ceramic cooking pot, add 10 cups (2.5 liters) of water and bring it to boil. 2) Then add Chicken breasts, pig stomachs and peppercorns in, cover lid and bring to a boil. Once it boils, lower heat to medium low, simmer for 1 and half hours, if you prefer pig stomach with a bit of chewiness and crunch. Otherwise simmer for 2 hours or until it’s softened 3) After 1 and half hours, try to use chopstick to see that you can poke through. Add 1 tsp salt for taste and simmer for another 10 minutes. After cooking, remove pig stomach. Then, let it cool down for 1-2 minute(s) and cut into strip (¾”W x 2½”L). Serve it when it’s hot or warm. Enjoy! 📝Note: 1) Cleaning pig stomach with salt and vinegar. The most important ingredient to remove the slime and odor by blanching is Chinese brown slab sugar. 2) Why did I use chicken breasts? It brings out the soup sweetness, more flavor, is low fat and healthy. 3) If you like more peppercorns, you can add more. 4) If you prefer pig stomach more soften, then cook at least 2 hours or more. ❤️❤️If you would like to support me, please like, share and subscribe to my channel for the next coming video.
