Hey there, Mom has been making and canning pepper relish for as long as I can remember. She often gives jars away as holiday gifts or just because she knows someone loves it. Recipe: (note, mom says she did 2 1/2 xs this recipe) 5 1/2 cups chopped green and red bell peppers(Use a food processor or blender.) Wash peppers and remove seeds. 9 stalks of chopped celery 6 onions, chopped 6 hot peppers, seeded and chopped Place vegetables in a large pot or granite pan. Add: 4 1/2 cups sugar 4 1/2 cups apple cider vinegar 1 to 3 tablespoons salt Bring to a boil and reduce heat. Simmer uncovered for 20 - 30 minutes. Fill jars and place rings on loosely. Place jars in hot water and boil for 10 minutes to seal the jars. If you plan to use this relish up quickly, you don't have to seal the jars.
