Bite sized deep fried idlis and bell peppers tossed in a delicious indo-chinese Jain sauce. It really is difficult to think you can make a Jain no onion – no garlic version of chinese food, but this recipe will make you believe otherwise. JAIN IDLI CHILLI Ingredients 6-8 idlis 1-2 green chillies, diagonally sliced 1 tablespoon oil + for deep-frying 1 tablespoon cornstarch 1 tablespoon refined flour Salt to taste 1 medium green capsicum, diced Black pepper powder to taste 1 teaspoon dried ginger powder ½ teaspoon sugar 1 tablespoon JainSchezwan sauce 1 tablespoon soy sauce 1 teaspoon vinegar 1 tablespoon chopped fresh coriander leaves Method 1. Heat sufficient oil in a kadai. 2. Take cornstarch in a bowl. Add refined flour and some water, mix to make a smooth slurry. Add salt and mix well. 3. Cut idlisinto bite-size pieces, dip them in prepared slurry and deep-fry in hot oil till golden and crisp. Drain on absorbent paper. 4. Heat 1 tablespoon oil in a non-stick pan. Add green chillies and capsicum, mix and cook for a minute. Add pepper powder, salt and dried ginger powder and mix well. 5. Add sugar, Schezwan sauce and mix well. Add fried idlis, soy sauce, vinegar and chopped coriander and some remaining slurry, mix and cook for a minute. 6. Serve hot.
