This video is a quiet look at how I’m setting up my kitchen garden and what I’m planting in February here in Charlotte, North Carolina (Zone 8a). Over the course of four days, I finish refilling my raised garden beds, adjust my trellis arches to make them more secure, relocate herbs based on a new planting plan, and finally plant cool-tolerant seeds in my juice and salad boxes. I’m focusing on leafy greens and root vegetables that do well in late winter and early spring—simple, reliable crops that support everyday meals and shared harvests. 🌱 What I’m planting right now • Spinach • Lettuce • Carrots • Beets • Radishes 🌿 Herbs being relocated and refreshed • Swiss chard • Basil • Green onions • Oregano • Sage • Thyme Each raised bed is 48 square feet, and while it’s more garden space than I technically need, I love being able to share food baskets with friends, family, and neighbors. This is not a rushed or overly precise garden setup—just a realistic, seasonal approach to building a kitchen garden that works with the weather and the rhythm of the season.
