This easy coffee cake recipe combines a moist, fluffy base with intense coffee flavor, creating a dessert that’s both elegant and indulgent. What you’ll learn in this video: How to bake a light genoise sponge or angel food style coffee cake The secret to a moist coffee cake that doesn’t dry out Step-by-step guide to making silky coffee ganache Tips to keep your sponge airy ✨ Ingredients 4 Eggs (medium size) Sugar 75g (¼ cup, 2 tablespoons) Plain Flour 65g (⅓ cup, 2 tablespoons) Corn starch 10g (1 tablespoon) Baking powder ⅓ teaspoon Vanilla extract 1 teaspoon Almond essence ½ teaspoon (optional) Melted Butter 40g (3 tablespoons) Coffee Ganache: Instant Coffee 1 tablespoon Warm Milk 2 tablespoons Milk chocolate 150g Heavy Cream 80ml (⅓ cup) Milk 2-3 tablespoons (optional) to soak the cake Measuring cup size - 240ml Baking pan 20x20 cm (8x8 inch) ✨ Method Whisk the Eggs and the Sugar for about 3-4 minutes. Mix the Flour, Corn starch and the Baking powder separately. Sift ½ of the flour mix into the Egg mixture. Fold gently. Add ½ of the melted Butter into the batter. Fold gently. Repeat the steps with Flour and Butter again. Add Vanilla. Fold gently until everything mixed well. Bake in a preheated oven at 175c (350f) for about 20-25 minutes. Once done, remove from the baking tray and leave to cool on a cooling rack. Making the Coffee ganache: Mix the Coffee with the warm Milk. Microwave Chocolate and Cream for about 1 minute. Mix well. Add the Coffee mixture. Mix well. Chill for about 10 minutes in the fridge. Whisk until thick and creamy for about 1-2 minutes. Drizzle some cold milk over the cake (optional) Apply the ganache over the cake, however you like. Dust some Cocoa powder. Enjoy!
