A classic French dessert typically made with a custard-like creamy filling. Traditionally, cherries are used but other seasonal fruits including plums, peaches, blueberries, raspberries, and strawberries are often used. In this video, I have used peaches for a light and summery twist. INGREDIENTS: 3-4 ripe peaches 2 eggs ½ cup (120ml) milk ½ cup (60g) self raising flour (for plain flour, add 1 teaspoon baking powder) ⅓ cup (65g) sugar 3 tablespoons apricot jam ¼ teaspoon almond extract Sprinkling of flaked almonds Dusting of confectioners’ sugar DIRECTIONS: 1. Preheat oven to 375°F (190°C) 2. Wash and cut peaches into quarters, carefully removing the stones. 3. Smooth apricot jam in the bottom of a 9” pie dish. 4. Cover the pie dish with the peaches, face down. 5. Whisk together the eggs, milk, sugar, almond extract, and self raising flour. (If you are using plain flour, add a teaspoon of baking powder) 6. Transfer mixture into a jug. 7. Pour batter around the peaches, avoid covering the top of the fruit. 8. Bake in the oven for 25-30 minutes. Remove when cooked, allow to cool. 9. Toast a handful of almonds in a frying pan. 10. Sprinkle almonds evenly over the top of the baked clafoutis. 11. For the finishing touch, sprinkle some confectioners’ sugar on top. 12.
