Hello, today I baked sweet potato cookies. It was popular in the past, so I made it again in a long time. It looks simple but it takes a long time to make it. I changed the recipe into easy and simple one that it may have some difference from the original one. The cookie doesn't contain a lot of sweet potatoes but it just tastes right and is filling. You have to make it with chestnut sweet potatoes. I thought I bought the chestnut sweet potatoes, but it turned out to be the honey sweet potatoes. Therefore, the paste was watery, so I had to use the dusting flour. I don't like the shape of it, but it turned out to be very crunchy and tastes good! ▶ingredient sweet potato cookie 120g unsalted butter, 70g powdered sugar, 2 egg yolks, 50g sweet potato, 130g cake flour, 40g bread flour, 1/2 vanilla bean, dusting flour sweet potato patty 70g unsalted butter, 60g powdered sugar, 1 egg, 1/2 vanilla bean, 10g condensed milk, 70g sweet potato, 90g almond powder finish 100g white coating chocolate ★1 sweet potato is needed for both the patty and the cookie. But you may need more depending on the size of the sweet potatoes. (I used the sweet potato that was bigger than the medium size) +Recipe Cook the sweet potatoes and peel them off. Sift them once. Cool the cookies. 2) Sweet potato patty Mix the room temperatured butter with sugar powder. Mix it with the egg and condensed milk. Mix it wit sifted almond powder and sweet potatoes. Fill the pastry bag with the dough when it's all sifted. Squeeze it in circular shape on the pan (make it to have similar size to the cookie dough) Freeze the patty dough in the freezer (more than 1hr ~ 2hrs) When the oven is all heated up, bake the dough right away (bake it for 7-8 mins in 230°C heated oven) Cool the baked patties. (If you have the sweet potato mold, it's way easier if you make it at the same time as pate sucree and leave it in the freezer for 12 hours) 3) Completion Prepare melted white chocolate Fix the patty between two cookies with the chocolate.
