Hey Peeps! So excited about today's video! I spent 2 days tackling my never-ending to-do list and got so much done! I will share 3 recipes in this video and so much laundry and cooking motivation. Dill pickle pasta salad 1 box (16 oz) rotini pasta ⅓ cup dill pickle juice from the pickle jar 2 cups chopped baby dill pickles 1 bag (2c) shredded Colby Jack cheese 1/2 red onion finely chopped Creamy Dill Dressing 1 cup mayonnaise ½ cup sour cream ⅓ cup dill pickle juice from the pickle jar 2 tablespoons chopped fresh dill (or 1 tablespoon dried dill) ¼ teaspoon salt ¼ teaspoon pepper Cook pasta according to package directions. When pasta is done cooking drain pasta and rinse with cold water. Move rinsed cooked pasta to a mixing bowl and pour ⅓ cup of pickle juice over it. Stir to combine. Let it sit while you prepare the rest. Chop all the veggies and herbs and add to a very large mixing bowl.Drain the pasta again that was sitting in the pickle juice. Add it back to the mixing bowl. Add in the pickles, cheese, and onion. Stir well to combine. In a small bowl, combine all the dressing ingredients and pour over the pasta salad. Stir everything together to combine well. Cover and refrigerate for a few hours and enjoy! Chunky Cheese Potato Soup 2 C chicken broth or vegetable broth 2 C diced peeled red potatoes (i never peel mine for this soup) ½ C diced carrot ½ C chopped celery ¼ C chopped onion 1 ½ tsp salt 1/4 tsp pepper 2 cloves garlic (minced) 1 C cubed cooked bacon (or ham) 1/4 C butter 1/4 C flour 2 C milk 2 C grated sharp cheddar cheese In a pot, combine the first eight ingredients. Bring to a boil. Reduce heat; cover and simmer until vegetables are tender. Add cooked bacon or ham. In a saucepan, melt the butter; stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cheese until melted; add to the soup. That’s it, ENJOY! Easy Protein Fajita Bowls -2 TBS olive oil -1lb. Ground Turkey (or chicken or beef) -3 TBS or 1 pkt. Taco season -1 tsp tajin (or any chili-lime seasoning) -1 pkg. frozen pepper-onion blend -1 can rotel -4 c cooked rice -lime wedges for garnish In a large skillet on med-high heat, add olive oil and ground turkey, and cook until totally done. If dry, add a little more olive oil. Add pepper blend, rotel, and seasonings cooked until veggies become tender and heated through. Serve over rice and garnish with lime wedges. Enjoy!
