Kanom Jeen Namya Pa Sai Kati ขนมจีนน้ำยาป่าใส่กะทิ is an herbaceous fish jungle curry broth ladled over noodles, eaten with an assortment of aromatics and crispy veggies. Kanom Jeen are the type of rice noodles, Namya is the type of herb paste made, and Pa means jungle. Why jungle? Perhaps due to the variety of herbs used in Namya or it could be that the flavors of the curry is robust enough to diminish any gamey flavors of wild meats found in the jungle. Also Sai Kati means coconut milk added. Regardless, it's so flavorful and comforting to me.
