Fire up the grill. Preheat the Recteq 700 to 400°F using Royal Oak Charcoal Hardwood Pellets. 2. Prepare the wings. Cut the wings into drummies and flats, spray them with Duck Fat Spray, and season with Heath Riles BBQ Chicken Rub and Buffalo Seasoning. 3. Start smoking. Place the wings directly on the grill, sprinkle with more Buffalo Seasoning, and cook for 20 minutes per side. 4. Make the sauce. Melt a stick of butter with Buffalo Seasoning in a cast-iron pan on the grill to create a homemade Buffalo sauce. 5. Baste the wings. Brush the wings with the Buffalo sauce on both sides, cook briefly to develop a slight char, and plate them up.
