🍅 The Secret Tomato Chutney Recipe (Serves 4-6) This chutney is smoky, spicy, and perfectly paired with your favorite Indian breads like Paratha or Thepla! 📝 Ingredients: 10-11 medium Tomatoes (washed) 1-2 medium Potatoes (Aloo) (optional, for thickness and taste) 1-2 tbsp Mustard Oil (Sarson ka Tel) Salt, to taste 🌿 Green Paste (Grinding): 1 cup fresh Green Coriander (Dhaniya) 5-6 cloves Garlic (adjust to taste) 3-5 Green Chillies (adjust spice level) 👩🍳 Method: Roast the Vegetables: Heat the mustard oil in a heavy-bottomed pan or wok (kadai). Once the oil is hot, carefully place the halved tomatoes and potatoes (aloo) into the pan. Season & Soften: Sprinkle a generous amount of salt over the vegetables. Cook covered (or uncovered, stirring occasionally) until the tomatoes are very soft, their skins start peeling away easily, and the potatoes are tender. Cool Down: Remove the pan from the heat and set the roasted vegetables aside to cool completely. Make the Green Paste: While the vegetables are cooling, combine the fresh coriander, garlic, and green chillies in a grinder and process until you have a smooth or coarse paste Peel & Mash: Once cool, peel the skin off the tomatoes (it should come off easily) and the potatoes. Transfer the peeled vegetables to a large bowl. Combine: Gently mash the cooked tomatoes and potatoes. Add the prepared green coriander-garlic paste to the bowl. Final Mix: Mix everything thoroughly, ensuring the chutney is well combined and mashed to your desired consistency. Adjust salt if needed.
