I hope you enjoy cooking this OSHISUSHI with your kids and family members during this situation! I am very grateful if you enjoy taste of Japanese homemade cooking. ......................................................................................... Ingredients (Serve for two, 20cm/8in mold) Salmon sashimi 1 lb or less English cucumber ½ or Persian cucumber1 Steamed rice approximately 1 lb Sesame seed 1 tbs (Sushi vinaiger) Rice vinegar 2 tbs Sugar 2 teaspoons Salt 2 pinches Wasabi Cilantro, dill or any fresh herbs (Optional) Instruction 1. Make sushi vinegar. Add all seasonings into a small bowl and combine them. 2. Prepare steamed rice into a large bowl. Pour sushi vinegar and mix well. Add sesame seeds and combine well. 3. Slice salmon. 4. Cut cucumber into julienne strips. 5. Prepare an OSHIHAKO which is a wooden box specifically used for making OSHISUSHI or a thin rectangular box covered with a wrap as an alternative. Place salmon and layer sushi rice, cucumber and sushi rice. 6. (If alternative used,) Place in the fridge to set until it serves. 7. Cut into a bite-sized pieces. 8. Serve with wasabi and cilantro leaf on the top. .........................................................................................
