Quick & Healthy Mixed Vegetable Sauté This quick and easy vegetable sauté is perfect for a healthy dinner. It comes together fast using simple ingredients and can be served on its own or over pasta, rice, or quinoa for a satisfying meal. Ingredients: 1 yellow onion, thinly sliced 1 potato, diced 1/2 red bell pepper, thinly sliced 1 cup cauliflower florets 1 carrot, thinly sliced 1/2 cup broccoli florets 1.5 cups mushrooms, sliced 2 tablespoons butter or olive oil Salt, turmeric, and black pepper (to taste) Juice of 1/2 lemon 1 tablespoon finely chopped parsley (for garnish) Instructions Prepare the vegetables: Slice the onion and carrot, dice the potato, slice the bell pepper and mushrooms, and cut the cauliflower and broccoli into bite-sized pieces. Sauté the onion with spices: In a large pan over medium heat, sauté the onion until soft. Stir in 1 teaspoon turmeric and 1 teaspoon black pepper. Add carrots and bell pepper: Add the sliced carrots and bell pepper to the pan, stirring to coat them with the spices. Steam lightly: Add 3–4 tablespoons of water to the pan, cover with a lid, and cook for 2–3 minutes. Add potato and cauliflower: Stir in the potato and cauliflower, cover, and cook for another 3 minutes. Add broccoli: Add the broccoli and cook for an additional 2 minutes. Add mushrooms and butter: Stir in 1 tablespoons of butter and the mushrooms, along with 1 teaspoon salt. Cook for a few more minutes until the mushrooms are tender and everything is evenly coated. Finish and garnish: Squeeze in the juice of half a lemon. Garnish with 1 tablespoon finely chopped parsley. Serve: Serve hot as a side dish or over rice, quinoa, or pasta.
