Then split along. 3) Marinate with salt and onion powder. Mix well, then add rice flour. 4) Mix well and keep it in the refrigerator. 5) Prepare sweet potato: Take a bowl and pour cold water, to this add kosher salt and vinegar. Mix well (This salt vinegar water will keep the sweet potato from changing color; even 1-2 days in the fridge ) 6) Peel the sweet potato then dip it in the salt vinegar water. 7) Take out the sweet potato and slice it with in the mandolin slicer. Then stack together and cut it into strips. 8) Dip all the sweet potato strips in the salt vinegar water. Then take out and keep aside to drain. NB: Do not wash with normal water! 9) To make the batter : In a bowl, combine rice flour, corn starch, glutinous rice flour, kosher salt, turmeric powder, sugar and baking powder. 10) Mix the ingredients. Pour cold water slowly and let the ingredients dissolve well. Leave some cold water to mix the all purpose flour. 11) Finally add all purpose flour part by part and mix well. Add the balance cold water and mix well. Batter is ready. 12) Heat vegetable oil at medium heat. To check the oil temprature, pour a spoon full of batter into the oil. If it instantly cooks and floats up then the oil is ready to fry the fritters. 13) Drop about 10 strips of sweet potato into the batter. Let the batter coat evenly and drain the extra batter before frying. 14) Drop it in the hot oil. Fry for 2- 3 minutes. 15) Take the shrimp and dip it in the batter. Drain extra oil then place the shrimp on the top of the strips. 16) Fry both sides.
