Raspberry Custard Tart | Homemade dessert ideas

Welcome To Calm Kitchen! Let’s make delicious Raspberry Custard Tart! Ingredients: TART BASE 180g all-purpose flour 30g almond flour 80g icing sugar 110g unsalted butter 30g beaten egg 2g salt Ground ginger for dusting RASPBERRY CUSTARD 150g Raspberries 9 egg yolks 75g sugar 500ml heavy cream 1 vanilla pod or 2 tsp vanilla paste/extract Zest of ½ lemon Pinch of salt (to balance sweetness) Instructions: TART: For the tart base, combine all-purpose flour, almond flour, icing sugar, unsalted butter, beaten egg, and a pinch of salt in a food processor. Blitz the mixture until the dough comes together. My butter got a little soft during filming, that's why mu dough is slightly more soft than it should be but it does change the final result, and ideally, butter should be cold. Wrap the dough tightly in cling film and chill it in the fridge for 1 hour to firm up. The dough will be quite crumbly, so you’ll need to press it into the tart pan by hand, keeping it about 2mm thick. Prick the dough all over with a fork, sprinkle with ground ginger, and bake at 170°C for 15 minutes. Remove from the oven, brush with a thin layer of egg, and dust again with ground ginger. Return to the oven and bake for another 10 minutes. Take out and allow to cool completely. CUSTARD: Remove seeds from vanilla pod. Pour the cream into a saucepan. Add the vanilla pod, seeds and lemon zest. Gently heat over medium heat until steaming — don’t let it boil. Remove from heat, cover with the lid and let it sit for 5–10 mins to infuse. Whisk together the egg yolks, coconut or white caster sugar, and a pinch of salt. Combine cream and yolks. Slowly pour the warm cream into the egg mixture, whisking constantly to avoid curdling. Once fully combined, strain the custard through a fine sieve into a jug to remove the zest and any lumps. Put the custard mix back on low to medium heat. Stir constantly with a wooden spoon or spatula, making sure to scrape the bottom and edges. It will thicken gently — this takes a few minutes. Do not boil — if it gets too hot, the eggs will curdle. It’s ready when it’s thick enough to coat the back of the spoon (you can draw a line with your finger and it stays clean). Strain it again to make sure it’s ultra-smooth. Cover the custard with cling film pressed directly on its surface to stop a skin from forming while it cools. ESSAMBLE: Ensure your tart shell is fully baked and cooled. Place fresh raspberries into the base of the tart shell. Use whole or halved berries depending on size. Once the custard is cool, pour gently over the raspberries in the tart shell. top with the remaining fresh raspberries, strawberries if you have and mint leaves. Carefully transfer the tart to the fridge. Chill for at least 3 hours, or until the custard is set with a smooth, soft texture (it should wobble slightly but not be liquid).
