So we thought about doing a healthy granola recipe and came up with these Paleo Bars as well as another option of looking at a Paleo Cereal. She was looking for a no bake recipes although these paleo bars would be great to bake at the start of your week and will last when kept in an air-tight container. I’d say these are some of the healthiest granola bars available as it’s just mostly good proteins from the nuts and seeds along with natural sugars. We also love keeping the paleo bars mix and just using to garnish Greek yogurt to make an easy paleo cereal. We hope that you enjoy these healthy breakfast bars or the paleo cereal, which ever you prefer! I usually always make a combination of both at one time. Paleo Bars Serves about 10-14 bars, depending on how big you cut them. Granola Cereal - A lot of servings, save half for cereal and half for bars! Dry ingredients: 1 cup of roughly ground almonds 1 cup of roughly crushed walnuts 1 cup of unsweetened coconut 1 cup of mixed seeds (we used sunflower and pumpkin seeds) 6 Tablespoons of maple syrup (or honey if you prefer) 2 teaspoons of vanilla extract 2 teaspoons of cinnamon Half a teaspoon of sea salt Handful of berries or other fruit (we only had banana) Method: No bake granola cereal Grind your almonds and crush your walnuts. In a medium mixing bowl add them to the coconut and seeds. In another bowl or jug, mix in maple syrup, cinnamon, vanilla extract and salt. Add the liquids into the dry and mix together. Store in an airtight container and add to some Greek yogurt! Throw on some berries or other fruit for an added boost! Method: Paleo bars. Set your oven to 365°F or 160°C. Get a baking tray and line with greaseproof paper. Add the mixture onto the tray and bake for 30 minutes. Chop them up and store them. Guilt free snacks!
