EID SPECIAL | KAJU KATLI Easy homemade Kaju Katli with just two ingredients — soaked cashews and powdered sugar. No essence, no syrup, just pure melt-in-mouth magic! Ingredients: Cashews (kaju) – 1 cup Powdered sugar – ¾ cup (adjust to taste) Ghee – 1 tsp (for kneading and greasing) Silver varq – optional, for garnish 1. Soak & Dry the Cashews Soak 1 cup cashews in water for 2 hours and drain. 2. Grind to Smooth Paste Add the cashews to a mixer grinder. Pulse in short bursts (no long grinding) to avoid releasing oil. If needed, add just 1–2 tsp water to get a thick, smooth paste. Scrape down the sides and avoid overworking. 3. Cook with Powdered Sugar In a nonstick pan, combine: The cashew paste ¾ cup powdered sugar Mix well before turning on the heat. 4. Cook on Low Heat Keep the flame low to medium. Stir constantly using a spatula — the mixture will first loosen, then start thickening. Scrape the bottom and sides as you go. 5. Check for the Right Stage After about 7–10 minutes, the mix will come together into a soft dough-like mass. Test: Take a small bit, cool it slightly, and roll it between your fingers — it should form a smooth, crack-free ball. If it does, it’s ready. 6. Cool & Knead Transfer to a greased surface or parchment paper. Let it cool for just 1–2 minutes (not too long). Grease your hands with ghee and knead it while still warm into a soft, pliable dough. 7. Roll & Cut Place the dough between two parchment sheets or butter paper. Roll it into a ¼-inch thick sheet using a rolling pin. Peel off the top layer, apply silver varq if using. Slice into diamond shapes with a sharp knife. Pro Tips for Perfect Katli: • Dry the cashews thoroughly after soaking. Any moisture left will make the dough sticky. • Grind in pulses, not continuously. Over-grinding = cashew butter, not katli! • Never use high heat – it can seize the dough or make it oily. • Stop cooking at the right time – dough should leave sides and pass the ball test.
