Sriracha shortage The current shortage of Sriracha is the result of a failed chili pepper harvest in northern Mexico. The type of chili pepper used in Sriracha sauce is the red jalapeño pepper. These peppers are allowed to ripen fully on the plant until they turn red, which gives them a slightly sweeter and fruitier flavor compared to green jalapeño peppers. Red jalapeño peppers are grown from January through April and require constant irrigation. Northern Mexico is facing a second year of drought. These conditions were exacerbated by two consecutive La Nina events. The drought that is affecting Sriracha sauce manufacturing may also affect avocados, tomatoes, and meat as well. What is Sriracha sauce? Sriracha sauce typically is made with red jalapeño pepper, garlic, vinegar, sugar, and salt. The sauce is named after the city of Si Racha in Thailand, where it was first produced and used as a condiment for seafood dishes. Today, Sriracha sauce is popular all around the world and is used in a wide range of cuisines, not just Thai food. Huy Fong Foods produces the most popular Sriracha sauce which is the one with the rooster on it. The company was founded in 1980 by David Tran, a Vietnamese immigrant who started making hot sauce in a small kitchen in Chinatown, Los Angeles. The company will not resume production of the Sriracha sauce until September at the earliest.
