As Easter approaches in Jamaica, families gather around outdoor kitchens, where the rhythm of laughter mixes with the sizzle of hot oil. With skilled hands, tender pieces of fresh fish are coated in a blend of herbs and spices, then gently lowered into the bubbling pot. The fish fries to golden perfection, the smell teases the taste buds and calls neighbours to join in the festivities. Frying fish at Easter in Jamaica becomes more than just a tradition—it’s a celebration of community, love, and the blessings of the season. #escovitchfish #jamaicanfood #cooking #ninoandlo These ingredients are good for 4-5 medium size Red Snapper or fish of your choice: 3-4 cups canola or vegetable oil or enough to fill the frying pan up approx halfway DRY RUB: 2 tsp Maggi fish seasoning 1 tsp garlic powder 1 tsp onion powder 1 tsp black pepper 1 tsp sea salt 1 tsp thyme leaves VEGETABLE & PICKLING: 10 pimento seeds 2 sprigs of fresh thyme 1 medium size onion 1 green pepper 1 red pepper 1 scotch bonnet pepper 2 Tbsp cooking oil 1/4 cup white vinegar —————————————— Directions: After carefully washing the fish in a large bowl of cold water with lemon or lime juice Pat each fish dry with a paper towel. as water in oil could be unsafe Make 2 diagonal slices about 1/2 inch deep on both sides of the fish.
