Add oil Add oil (or oil + butter) and let it shimmer. Cook onions first Add onions and cook 1–2 minutes until slightly soft and caramelized. Add mushrooms Stir in mushrooms and cook another 2 minutes until browned. Add zucchini Toss in zucchini, spread evenly, and let sear for 2–3 minutes without stirring. Season Add garlic, soy sauce, black pepper, and sesame oil. Toss everything together. Finish Cook another 2 minutes until zucchini is tender but still slightly crisp. Garnish Sprinkle with sesame seeds just before serving.
