I start the morning with a gentle self-care routine, which includes a warm bath, brushing my teeth, and moisturizing my face, to begin the day refreshed and grounded. Then, it’s breakfast time! I prepare a fresh and seasonal meal: homemade blueberry soup, a salmon salad, and croissants. After enjoying breakfast together, I head to the kitchen again to bake some soft and fragrant blueberry muffins. It’s blueberry season here in Finland, and I couldn’t resist! 🫐 In the afternoon, my husband, our sweet dog, and I take a calm walk through the forest and end our day by the lake, soaking in the beauty of the Finnish summer. 📌Blueberry Muffins📌 Ingredients:📌 240g all-purpose flour 2 tsp baking powder 1 tsp salt 230g fresh blueberries 170g granulated sugar 113g unsalted butter (melted) 2 large eggs room temperature 2 tsp vanilla extract 180ml whole milk room temperature 3-4 tbsp fresh blueberries and coarse sugar for topping (optional) Instructions:📌 1. Preheat the oven to 200°C. 2. In a medium bowl, sift the flour, then add baking powder and salt. Whisk them together and set aside. 3. In a small bowl, combine the blueberries with a tablespoon of the flour mixture and toss to combine. (This will help prevent them from sinking in the batter.) 4. In a large mixing bowl, beat the sugar, butter, vanilla, and eggs together on medium speed until light and fluffy, about 2 minutes. 5. Add the flour mixture into the batter in 2 parts, alternating with half of the milk between flour additions. Stir in the blueberries. 6. Line a muffin pan with 10 paper liners. Divide the batter among the paper liners. (They will be full.) Scatter more blueberries on top and sprinkle with coarse sugar. 7. Bake for 25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out with a few moist crumbs. Let the muffins cool in the tin for a few minutes before transferring them to a cooling rack or serving dish. 8. Enjoy the muffins with your favorite drinks.
