These muffins are perfect for breakfast, an afternoon treat, or whenever you crave something citrusy and sweet. Let’s get started! Ingredients (Lemon Muffins) 75g (1/3 cup) granulated sugar Zest of 1 lemon 1 large egg 60 ml (1/4 cup) vegetable oil 60 ml (1/4 cup) buttermilk 15 ml (1 tbsp) lemon juice 125g (1 cup) all-purpose flour 3g (3/4 tsp) baking powder 1g (1/4 tsp) baking soda 1/4 tsp salt Baking Time & Temperature Preheat your oven to 350°F (180°C) and bake for 20-25 minutes. Prepare the Batter: In a mixing bowl, whisk together sugar and lemon zest until fragrant and well combined. Add the egg and continue whisking until the mixture becomes light and slightly frothy. Pour in the vegetable oil, buttermilk, and lemon juice, whisking until smooth. Sift together the flour, baking powder, baking soda, and salt, then gradually fold them into the wet ingredients using a spatula or whisk. Be careful not to overmix. Bake the Muffins: Line a muffin tray with paper liners or lightly grease it. Divide the batter evenly among the muffin cups, filling them about 2/3 full. Bake in the preheated oven (350°F / 180°C) for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
