Recipe 1 1/2 lbs perch or halibut 2 tbsp butter 1 1/2 tsp salt dash of pepper 2 tbsp chopped onion 1/4 cup water or 1/2 cup for frozen fish 2 tbsp flour 1/4 tsp salt 4 servings cut fish into individual servings brown fish in hot fat in cooker, then place fish on rack Season and sprinkle with onions Add water Cover, set control to 10 PSI and cook for 4 min once wiggler wiggles Cool cooker normally, Place on hot platter and mix flour with liquid in cooker stirring till smooth. Serve over fish. The fish I used this time was basa fillets. It was good but extremely soft. We prefer the haddock I used the last time. It is a much firmer fish and holds up better. Have not tried the perch but I think cod, lake trout and even salmon would be good. Pike would be great if you can get rid of the bones. Spices I used were spicy paprika, smoked salt, dill and smoked fish seasoning. So use what you normally enjoy with a fish dinner. I used 2 med. vidalia onions since I thought it would give more flavour than the little bit of chopped onion called for. I will try and find more recipes for the pressure cooker that are not stews chowders and beans. Don and I do not eat those much so the single ingredient meals are more to our liking so I will try and pass them on.
