Season the chicken breasts, lay on a board and wrap 3 slices of bacon around each fillet, overlapping slightly and ensuring the ends of the bacon are under the chicken so they don’t unwrap. Transfer the chicken to a baking dish and bake for 25-30 mins until the bacon is crisp and the chicken is cooked through. Pour over the barbecue sauce and tear over the mozzarella. Scatter with Parmesan, if using, then bake for 5-8 mins until golden and bubbling.
