Today I’m making two classic Asian dishes that are perfect for an easy homemade meal 🍽️ Crispy spring rolls and simple fried rice — both easy to prepare, full of flavour, and great for lunch or dinner. Easy Pork & Taro Spring Rolls Simple homemade spring rolls filled with pork, taro, vegetables, and rice noodles. Crispy, tasty, and perfect for everyday cooking. Ingredients Filling • 600 g pork mince • 1 cup taro, grated • 1 carrot, grated • ½ cup spring onions, sliced • 1 brown onion, finely chopped • 2 garlic cloves, minced • ½ cup dried rice noodles, soaked in warm water, squeezed dry, and chopped Seasoning • 1 tbsp fish sauce • 1 tbsp oyster sauce • 1 tsp sugar • ½ tsp vegetable stock powder • Black pepper, to taste Wrapping • 2 packets spring roll sheets • 2 tsp plain flour mixed with a little water (for sealing) For Frying • Vegetable oil Simple Instructions 1. Make the Filling Put all the filling ingredients into a large bowl. Add the seasoning and mix well until everything is combined. Let it sit for 5 minutes. 2. Roll the Spring Rolls Separate the spring roll sheets and keep them covered with a damp cloth. Place one sheet on the bench with a corner facing you. Add a small spoon of filling near the bottom. Fold the bottom over the filling, fold in the sides, then roll up tightly. Seal the edge with the flour paste. 3. Fry Heat oil in a pan over medium heat. Fry spring rolls in batches for 4–5 minutes, turning until golden and crispy. Drain on paper towel. Serve Enjoy hot with sweet chilli sauce Helpful Tips • Don’t overfill the rolls • Keep them tight so they stay crispy • You can freeze them before frying Chinese Fried Rice Recipe (Better Than Takeaway!) Ingredients: Rice & Veggies: • 2½ cups cooked white rice (day-old is best) • 2 tbsp oil • 1 onion, finely chopped • 3 cloves garlic, finely chopped • ½ cup chopped bacon • 2 spring onions, finely chopped • White parts → for stir-frying • Green parts → for topping • 3 eggs Seasoning: • 3 tbsp soy sauce • 1 tbsp oyster sauce • Black pepper, to taste • 1 tsp sugar • 1 tbsp sesame oil (for finishing) Instructions: 1. Cook the eggs first: Heat a little oil in the pan, scramble the 3 eggs until just cooked, then remove and set aside. 2. Cook the aromatics: Add the remaining oil. Stir-fry the onion, garlic, and the white parts of the spring onion until soft and fragrant. 3. Add the bacon: Cook until golden and slightly crispy. 4. Add the rice: Add the cold, day-old rice. Break up any clumps and mix well with the onion and bacon. 5. Season: Add soy sauce, oyster sauce, sugar, and black pepper. Stir-fry until everything is well coated and hot. 6. Add the eggs back: Stir the scrambled eggs into the rice at the end. 7. Finish with greens and sesame oil: Turn off the heat. Sprinkle the green parts of the spring onion and drizzle sesame oil on top. 8.
