Ingredients: Dry ingredients: 3 cups flour bread flour 1 tbsp or 3 tsp baking powder 1/2 tsp salt 1 tsp cinnamon 1/2 tsp allspice 1/4 tsp ginger Roughly 1/4 tsp freshly grated nutmeg Zest of 1 lemon 3/4 cup raisins ( can also add mix peel or maraschino cherries) 🍃Dry ingredients: 1 and 1/2 bottle Malta 1/4 cup unsweetened apple sauce ( can also substitute with flax egg or vegan egg replacer) *To make flax egg mix 1 tbsp ground flaxseed with 2 1/2 tbsp water. 1 1/2 tbsp molasses 1 tsp browning 1/2 cup agave 1/3 cup melted unrefined coconut oil 2 tsp vanilla extract 🍃Glaze 1 tbsp agave 1/2 tbsp 1/2 tsp unrefined coconut oil Bring to a boil for 1-2 minutes can always adjust to get a bit more glaze Bake at 325 degrees Fahrenheit for 1 hour to 1 hour and 10 minutes. After about the 55 minutes mark you can check on it. 🍃Tips Before you bake or put the pan in the oven loosely cover with a piece of foil paper to prevent the bun from burning or browning too quick at the top( don’t allow the foil to touch the batter) Leave a little space for the bun to rise without touching or sticking to the foil although you could lightly grease the foil in case. Allow bun to fully cool. If possible cover and leave it out for a day before cutting. At day two of baking wrap the remaining bun with foil wrap or kitchen towel and place in your refrigerator to keep it moist aswell as prevent it from going bad (remember there’s no alcohol or preservative). This is best eaten within 3 days. Enjoy with a vegan cheese of choice.
