VANILLA BEAN CUSTARD Who doesn’t love CUSTARD? This sweet, Tahitian VANILLA BEAN infused version of the delightful baking staple is an absolute treat! ----------------------------- INGREDIENTS 2 vanilla beans, scraped 500 ml of whole milk 325 ml of heavy cream 1 pinch of sea salt 2 eggs 2 yolks 210 grams of sugar 85 grams of cornstarch 25 grams of unsalted butter, at room temperature ----------------------------- INSTRUCTIONS Add the vanilla seeds and pods, milk, cream and salt to a medium saucepan and bring to a simmer. Cover and steep for 15 minutes. Remove the vanilla pods and set aside. In a large bowl whisk together the eggs, yolks, sugar and cornstarch until slightly pale. Place the cream mixture back on the heat and bring to a simmer. Pour 1/3 of the hot cream into the egg mixture and whisk to temper the eggs. Pour the egg mixture back into the saucepan and bring to a boil, whisking continuously, until the custard has thickened, about 2 minutes. Strain the custard if there are any lumps and add butter to give the texture fluffiness. Allow to cool for about 10 minutes. Voila! This recipe comes from my bible - Laduree: The Sweet Recipes.
