Delicious and comforting one-pot meal! The combination of turmeric, cinnamon, and cardamom gives it that signature warm Iraqi flavor profile. I included the option to make it vegetarian. Rice and Black-Eyed Peas with Meat (Timman Pukla) Prep time: 10 mins | Cook time: 25 mins | Rest time: 10 mins Ingredients The Base 1/2 lb Ground meat (beef or lamb) OR Chicken breast (diced) Vegetarian Option: Omit meat and use 1 large onion, chopped. 1 tbsp Olive oil or butter (add more if the meat is lean) 1 cup Basmati rice (washed only, not soaked) 1½ cups Cooked black-eyed peas (canned or pre-boiled) The Spices 1 tsp Mixed spices (Baharat) 1 tsp Turmeric 1 tsp Black pepper ½ tsp Cinnamon ½ tsp Cardamom 1–2 tsp Salt (to taste) The Liquid 2 cups Liquid (You can use the black-eyed pea broth, meat broth, or water) Instructions 1. Cook the Meat (or Onions) In a medium pot over medium heat, add the olive oil (or butter). Add the ground meat (or chicken). Cook, stirring frequently, until the meat is fully browned. Note: If making the vegetarian version, sauté the chopped onion here until golden. 2. Add Rice and Spices Add the washed basmati rice to the pot. Stir well for a minute to coat the rice grains with the fat. Add all the spices: mixed spices, turmeric, black pepper, cinnamon, cardamom, and salt. Mix well until fragrant. 3. Add Liquid and Simmer Gently stir in the cooked black-eyed peas. Pour in the 2 cups of liquid (broth or water). Turn the heat to High and bring the mixture to a boil. Once boiling, cover the pot tightly and reduce the heat to Low. Simmer for 20 minutes undisturbed. 4. Rest and Serve After 20 minutes, turn off the heat. Do not open the lid. Let the pot sit covered for another 5–10 minutes. This allows the rice to finish steaming and become fluffy. Gently fluff the rice with a fork.
