If you travel down the historic Route 66 in Los Angeles, California, a massive queue in Glendora might grab your attention. People from across the US flock to this shop, called The Donut Man for, you guessed it, donuts. They sell a wide variety of them but the ridiculously amazing queue is for the all time fan favourite Strawberry Donuts. We didn't know about The Donut Man's Strawberry Donut until suggested it. We checked it out and was inspired to create our own spin to it. In this recipe, we created everything from scratch, from the strawberry jam to the donut and had a good fun making it. It is hard to identify if the jam is ready if it is still hot hence the cold saucer will help lower the temperature of the jam when testing. Donut: • 280g all purpose flour • 40g sugar • ½ tsp salt • 1 egg • 120g whole milk • 40g melted butter • 7g instant dry yeast Note: • The duration of proofing depends on the environment's humidity. There are lots of tricks to help make the proofing process quicker, one example is preheating an oven at 50c then turn it off, place the dough in the oven for about 30 minutes. Results still vary though. • To prevent the dough sticking to your hand when transfering to a bowl, you can cover your hand with oil.
