Recipe below 👇 This is the perfect halloween sweet treat, complete with a pumpkin custard and googly eyes that might make you think they are too cute to eat 🥹 except you should definitely eat them 😂 let us know if you try these in the comments!! #pumpkin #custardbuns #halloween #halloweenrecipe #halloweentreat PUMPKIN PIE SKOLEBOLLER RECIPE: INGREDIENTS: PUMPKIN CUSTARD: 2 egg yolks 25g (2 tbsp) sugar 110g (1/2 cup) pumpkin puree Pinch of salt 1/2 tsp pumpkin pie spice (or mixed spice) 1/2 tsp vanilla extract 13g (1.5 tbsp) cornstarch 200 ml (~3/4 cup) whole milk 14g (1 tbsp) unsalted butter DOUGH: 200 ml (~3/4 cup) milk 2 tsp instant yeast (2.25 tsp active-dry yeast, 17.5g fresh yeast) 1.5 tbsp sugar 1 egg 1 tsp vanilla extract 375g (~3 cups) all-purpose flour 3/4 tsp salt 35g (2.5 tbsp) unsalted butter, softened 1 egg for egg wash DECORATION: Powdered sugar Splash of water Shredded unsweetened coconut Edible googly eyes INSTRUCTIONS: 1. To make the custard, combine the egg yolks, sugar, pumpkin puree, salt, pumpkin pie spice, vanilla extract, and cornstarch in a medium heat-proof bowl. 2. Heat the milk in a saucepan on the stove, until just about to boil, with small bubbles forming around the edges. 3. Pour half of the hot milk into the egg mixture while whisking continuously. 4. Pour the egg and milk mixture into the rest of the milk on the stove, still whisking to avoid scrambling the eggs. 5. Heat this up, continuously whisking, until the mixture thickens, then whisk for another 30 seconds or so on the heat. 6. Remove from the heat and add the butter, then place cling film on top, pressing it down onto the surface of the custard. Refrigerate until fully cooled. 7. For the dough, combine the yeast, warm milk, and sugar in a large mixing bowl. Add the egg and vanilla and whisk to combine. 8. Add the flour, salt, and butter, then knead for 10-15 minutes until completely smooth and not sticky (add more flour if needed). Let this rise in a warm place for 45 minutes to an hour, or until doubled in size. 9. Divide the dough into 10 equal pieces, then shape into balls and place on two lined baking sheets. 10. Cover and let these rise for 15-20 minutes. In the meantime, preheat the oven to 200 C or 390 F. 11. After 15 minutes, press down in the middle of each bun with the bottom of a small glass or your fingers, to create the well for the custard. Cover and let rest another 15-20 minutes. 12. Press down each well again, then egg wash the buns. Add a spoonful of custard on top of each one. 13. Bake for 10-12 minutes, then transfer to a cooling rack and let cool fully. 14.
