Ingredients for cassava 2 lbs. cassava 1/2 tsp black black 1 1/2 tsp salt 2 tbsp green seasoning Ingredients for fish 1 1/2 lbs. of salted Cod fish 1 onion finely 3 green onions finely chopped 2 mari wirrie peppers finely chopped 1 clove of garlic 3 stems of flat leaf parsley finely chopped 1 tbsp tomato paste Preparation Peel and wash cassava add to a pot with enough water to cover it. Add 1 tsp salt and cook for 20 minutes or until tender. Drain and mash while hot and set aside to cool. Add green seasoning, salt and black pepper. Mix well and taste for flavour. Rinse and Soak salted fish for at least 4 hours Boil for 30-40 minutes, drain from the water it was cooking in and add fresh room temperature water. Wash the fish under cold water and squeeze out excess water. In s as pan with 2 tbsp warm oil add the fish. Add grated garlic, tomato paste, onions, flat leaf parsley, green onions and pepper mix well and cook for 5-8 minutes Set aside to cool. Take a little cassava and flatten it add salted fish in the centre and add some more cassava mixture on top to seal the fish in the centre. Continue with the process until all the mixture is done. Roll the cassava surprise in egg batter and fry until golden brown Sauce ingredients 4 small cucumber 1 clove garlic 2 stems of cilantro 1 mari wirrie pepper 1/2 tsp salt Add all ingredients to a blender with 1/4 cup of water and blend to a smooth texture Enjoy!
