Unveiling the wonders of the humble endive, a salad vegetable packing a punch with a rich supply of vitamin K. Essential for blood clotting and bone formation, it doesn't stop there. Its treasure trove also includes vitamin A, folate, and fiber. Thanks to its alkaline nature, it's a nifty tool against minor heartburn or acid indigestion. Growing endive isn't a herculean task either. A partly shaded site, rich medium loam soil holding moisture well, and a pH near six point five are your starting points. A couple weeks before sowing, work in highly fertile compost or planting mix. For a fall or winter harvest, sow in midsummer or late summer. Place seeds about a foot apart in shallow drills. Remember, direct sowing trumps transplanting to prevent quick seeding. Keep the soil moist, weed as necessary to keep competition at bay. Twelve weeks after sowing, blanch the endive for a more delicate flavor. Simply, place flowerpots over them. Harvest when hearts are a light creamy color.
