This was the best strawberry dessert ever, so simple to make not a lot of ingredients, and so tasty. You guys will just love this I promise. Ingredients: 1-1/2lb, 681g of fresh strawberries with the tops cut off and divided, Half thinly sliced, the other half finely diced. 2Tbl, 30g of granulated sugar 1tsp, 15ml of balsamic vinegar 1/4tsp, 1g of kosher salt 1/2c, 120ml of water 8oz, 227g container of mascarpone cheese room temperature 1/2tsp, 2g of vanilla extract 1c, 240ml of heavy whipping cream 1/2c, 60g of powdered sugar 24-30 lady finger cookies Directions: 1) In a 2-quart saucepan combine diced strawberries, sugar, balsamic vinegar, and salt. Cook on med till sugar dissolves, then let the mixture continue to simmer for another 10 minutes till strawberries have broken down and have turned into a sauce. 2) Remove the saucepan from the heat and pour into a fine strainer. push the juices through and set aside the strawberry pulp for a layer of the dessert. 3) Add water to the juice and place both the water and pulp into the fridge till needed. 4) In a large bowl mix together the mascarpone cheese and vanilla and set aside. In in a second large bowl with a hand mixer, or using a stand mixer with a whisk attachment, whip the heavy cream and powdered sugar to stiff peaks. then fold it into the mascarpone cheese. Assembly: 5) Dip the lady finger cookies into the strawberry sauce for no more than a couple of seconds one at a time, and layer them in a 9x9in, 23x23cm pan, once the layer is completely covering the bottom, add a layer of the whipped topping mix using half the mix, and on the first layer dollop the strawberry pulp on top of the filling. Then add a layer of sliced strawberries. Repeat with the lady fingers, whipped topping and sliced strawberries on the second layer. 6) Place into the refrigerator for 8 hours up to overnight. 7) serve and enjoy with family and friends
