Making different types of Pithe (seasonal homemade Bengali sweets) during the winter is a ritual in every Bengali household. The key ingredients are mostly Rice flour, Maida, Suji, Jaggery, Coconut, etc. Ranga Alur Puli is a kind of Pithe that is not popular like Patishapta, but if you try this once you’ll keep repeating it in the future. My Mashi (maternal aunt) used to make this version of Ranga Alur Puli in the past, and whenever she does, we get lucky to taste some. Ranga Alu is the Bengali name of the Sweet Potatoes. Here soft coconut filling moistened with the flavourful Date Palm Jaggery, then it gets enveloped into the shells made of Sweet Potatoes. Later fried to a deep golden colour and soaked into the jaggery syrup, it becomes something so tasty that one cannot say no to this. The whole process of the recipe might sound a bit longer, but the end result is always rewarding. Recipe Notes. If you can source seasonal liquid Date Palm Jaggery which is available during the winter, then you don’t need to make the jaggery syrup for this recipe.Heat the liquid Date Palm Jaggery until warm, and transfer the Pulis for soaking into it. This is the best version of Ranga Alur Puli you could ever think of.
