Join Rida Aftab as she brings you another trio of comforting dishes that blend flavor, health, and sweetness — all in true Tarka style! 👩🍳💛 👩🍳 Chef: Rida Aftab 📺 Show: Tarka 📌 Channel: Masala TV Makhni Milk Palak Ingredients: • Spinach – 1 kg • Milk – ½ liter • Green chilies – 12 • Butter – 100 grams • Yogurt – 250 grams • Turmeric powder – 1 teaspoon • Salt – 1 teaspoon • Kashmiri red chili powder – 2 teaspoons • Ginger garlic paste – 1 tablespoon • Fresh cream – 1 cup • Ground all spice powder – 1 teaspoon • Clarified butter – 1 cup • Dried fenugreek leaves – 2 tablespoons Method: 1. Wash and chop the spinach. Add green chilies and milk, then boil until the spinach becomes soft and tender. 2. Once done, mash or blend the mixture well to form a smooth paste. 3. Add Kashmiri red chili powder, salt, turmeric, yogurt, ginger garlic paste, and Clarified butter. Cook and sauté until the mixture thickens and releases oil. 4. Finally, mix in the fresh cream and allspices. 5. Top with butter and dried fenugreek leaves, and serve hot. Your Makhni Milky Palak is ready — rich, creamy, and full of flavor! Makhni Rice (Butter Rice) Ingredients: • Rice – ½ kg • Butter – 50 grams • Soya – 1 bunch • Onion – 1 medium • Green chilies – 4 • Garlic – 1 tbsp • Black pepper – 1 tsp • Cumin seeds – 1 tsp • Salt – 1 tsp • Oil – 2 tbsp Method: Heat oil in a pan and add garlic and cumin seeds. When a pleasant aroma arises, add 2 cups of water along with salt, black pepper, and chopped green chilies. Then add the soaked rice and let it cook until the water dries up. Once done, place it on dum (steam) for a few minutes. In another pan, heat butter and fry the onion until golden brown. Add finely chopped dill leaves and cook briefly. Transfer this mixture to a serving dish, then spread the cooked rice over it and serve hot. Paneer kay Laddu Ingredients: • Fresh milk – 2 liters • Milk powder – 1 cup • Ground cardamom – ½ teaspoon • Powdered sugar – ½ cup • Finely chopped almonds and pistachios – 50 grams • Silver leaf – as required • Desiccated coconut – 1 cup • Vinegar or lemon juice – 2 tablespoons Method: 1. Boil the milk in a pot. Once it comes to a boil, turn off the heat. 2. Mix vinegar or lemon juice with a little water, then add it gradually to the hot milk while stirring continuously. 3. Let it rest for a few minutes until the milk curdles and separates into paneer (curds) and whey. 4. Strain it through a muslin cloth and squeeze out all the excess water. 5. Add ground cardamom and milk powder to the paneer, then mix well until smooth. 6. Shape the mixture into small round balls (laddoos) and roll them in desiccated coconut to coat evenly. 7. Garnish with silver leaf, almonds, and pistachios on top.
