If your size is not available and you would like to be notified when more are available, please email us with your name & how many or each size you would like at this address: [email protected] FULL RECIPE Crispy Duck 1 tbsp honey 2 tsp Chinese five-spice powder Half duck Preheat the oven to Gas Mark 3 165C/325F. Take a large roasting tin and place a wire rack inside. Trim the fat from around the parsons nose Score the skin of the duck in a criss-cross pattern (breast side) with a sharp knife. Season with five spice and place the duck on the rack in the roasting tin. Place in the oven for 3 to 3 ½ hours. Turn the duck over every hour After the duck has cooked for 3hours, take it out of the oven and turn the oven temperature up to Gas Mark 6 200C/400F Turn the duck so that it’s breast-side-up again and spoon honey & 5 spice over the top of the duck Place back in the oven for 20 minutes until the glaze has gone dark brown and caramelised. Take the duck out of the oven. Leave to rest for 10 minutes, then place on a large plate and shred all the meat using two forks. Plum sauce: 1 tbsp vegetable oil 1 red onion peeled and chopped 1 tbs stem ginger in syrup (or 1 tsp root ginger grated) 6 cloves garlic minced 600 g ripe plums de-stoned and cut into small (1 cm pieces) – no need to take the skin off 6 tbsp dark soy sauce 4 tbsp muscovado sugar 1 tbsp white wine vinegar 1 tsp 5 spice 1 chilli Heat the oil in a medium sized sauce pan. Add the onion, garlic & chilli and sauté on low for 5 mins Add in the rest of the ingredients, turn up the heat and bring to a gentle bubble. Turn the heat back down and allow everything to simmer for 20 minutes. Give it a stir every so often. After 20 minutes, turn off the heat and blend the mixture in the pan using a hand blender. Pancakes 300g plain flour Rapeseed oil, for brushing While the sauce is cooking, put the flour, 250ml boiling water and a pinch of salt in a bowl and mix together until it forms a dough. When cool enough to handle, knead until smooth. Divide it into 12 – 15 balls and roll each one out as thin as you can. Brush a frying pan with the oil and cook each pancake over a medium heat for 30 secs each side or until cooked but not browned.
