EXTRA CRISPY FRIED CATFISH | RICHARD IN THE KITCHEN

In this video I’ll show you how to cook extra crispy fried catfish. Freshly caught catfish filets simply battered in a mixture I have found to maximize crispiness then fried until golden brown. Shopping List: 2 lbs. catfish filets 1 cup of yellow cornmeal 1/3 cup all purpose flour 1 tbs. corn starch 1 tbs. cultured buttermilk blend powder 1 tsp. baking powder 1 cup warm water 1 tsp. garlic salt 1 tsp. paprika ½ tsp. course black pepper High temp cooking oil Directions: Heat the oil to 360 degrees. Keep in mind that when you add the fish the temp will drop a bit. Your goal is to fry the fish at 350. Rinse the catfish thoroughly under cold water then pat them dry. Cut the filets into thirds In a bowl, add the cornmeal and flour then season it with the garlic salt, pepper and paprika. Stir to combine well. In a separate bowl, add the corn starch, baking powder, butter milk powder and warm water. Whisk until smooth. Dredge each piece of fish first into the wet mixture then the dry mixture then repeat once more shaking off any excess. Place in a plate and let set for about 5 minutes. When the oil has reached 360 degrees add the fish in batches so as to not over crowd the pan and drop the temperature. Keep an eye on the temp and try to stay at 350. The fish is done when they begin to float to the top and are golden brown. Drain the fish on a rack or paper towels. Serve with French fries and hush doggies. Enjoy!
