Green Pepper Jelly 6 cups White granulated Sugar 1-1/2 cups White Vinegar 1/2 Teaspoon Salt 1.75-ounce package Powdered Fruit Pectin 1 cup finely chopped Green Bell Pepper 1 cup finely chopped Jalapeno Pepper In a large stock pot mix the sugar, vinegar, salt and pectin together well. Bring to a boil for 2 minutes. Now add the bell pepper and jalapeno pepper. Bring to a boil for a couple more minutes. Place a teaspoon on a saucer and put in the freezer for 1 minute. Test to see if you can run your finger through the middle of the jelly and it stay in place without running back together. If not, boil a couple more minutes and try again. Once it passes the saucer in the freezer test it is ready to put into sterilized jars and a lid placed on to seal. Enjoy poured over cream cheese with crackers. Christmas Pepper Jelly 6 cups white granulated sugar 1-1/2 cups white vinegar 1/2 teaspoon Salt 1.75-ounce package powdered fruit pectin 1 cup finely chopped Red Jalapenos 1 cup finely chopped Green Bell Peppers (If you cannot find red jalapeno peppers then you can use the green jalapenos with a red bell pepper to give you the same Christmas colors and very similar flavor) Follow the same instructions as above for the green jelly. Pepper Jelly is good with crackers and cream cheese. It is also really good on a biscuit or with a piece of pork.
