Do you like Chee Cheong Fun? There are many types of CCF in Malaysia, mushroom sauce, sweet sauce, Hong Kong style, prawn paste...This version of CCF roll is filled with stir fried yam bean & carrot which is one of our favourite childhood comfort food! Now we hardly find this type of CCF in the city. This CCF roll is not that difficult to make. Check out the cooking video and recipe here. This recipe can make up to 5 rolls of CCF. CCF Filing:- ------------------- Shredded Yam Bean 300g Shredded Carrot 100g Shallots 6pcs - thinly sliced Soaked Dried Shrimps - 2 tablespoons Oyster Sauce - 1 tablespoon Sesame seed oil - few drops Soy Sauce - 2 tablespoons White pepper - few dash Minced Garlic - 2 cloves Water - 100ml CCF Sauce:- --------------------- Sugar 1 1/2 teaspoons Soy Sauce 1 tablespoon Warm Water 1 tablespoon - to dissolve sugar Shallot oil - 1/2 teaspoon CCF:- ---------- Rice Flour - 5 tablespoons Wheat Starch - 2 tablespoons Water - 200ml 1) Preheat cooking oil over medium heat, fry shallots. Turn to medium low heat. Stir occasionally until it turn light brown. Remove and strain shallot oil. 2) Preheat 2 tablespoon cooking oil. Stir fry garlic and dried shrimps. 3) Add in Yam bean and carrot. Stir fry for another 5 minutes. Add in sauce & water. Cover and cook for 15 minutes. Remove and set aside. 4) Combine wheat starch, rice flour and water. Strain the mixture and set aside for 30 minutes. 5) Oiled baking tray with shallot oil. Ladle thin layer of batter onto the tray. 6) Adjust tray to allow batter spread evenly. Steam for 3 minutes over high heat 7) When it's cooked, remove from heat, spread yam bean mixture on top. Roll up and cut into small pieces. Repeat this steps. 8) Drizzle CCF sauce, roasted sesame seeds, fried shallot & garnish with green onions.
