I usually don't have cognac on hand as its not a go to for me, but since I picked some up for another cocktail, I realized I could make the Classic Cognac Sazerac... So... I did. Ingredients: 2 oz Cognac ½ oz Simple Syrup 3 dashes Peychaud's Bitters ¼ oz absinthe 1 piece of Lemon Peel Chill a lowball glass. Add ice, Cognac, simple syrup, and bitters to mixing glass. Stir until well combined and chilled. Add absinthe to the chilled lowball glass, swirling until all internal surfaces of the glass are coated in absinthe. Dump excess absinthe.
