Cheese And Bacon Croquettes | Delicious Bite Sized Snack With Only A Few Basic Ingredients Makes 18. 4 medium potatoes, cut roughly ½ onion, diced 1cm 150g streaky bacon, diced 1cm 2 tbs parsley, chopped ¼ cup parmesan cheese ¼ tsp salt ¼ tsp black pepper ⅓ cup plain flour 1 egg, beaten 1 cup panko breadcrumb Olive oil Boil potatoes in salted water until soft. Drain and mash. In a pan, fry onion and bacon in a small amount of olive oil on medium heat. Fry until there is some colour on the bacon but not crisp. Remove from pan and set aside. Once cooked ingredient have cooled, mix them together along with parsley, parmesan cheese, salt, and pepper. Scoop 1 heaping tbs of the mixture and form into a ball. Continue until all the mixture is used. Commence breading each ball by coating in flour, egg, then panko. Heat about 1cm of olive oil in a pan to medium heat. Place as many balls into the pan without overcrowding and fry until golden. Ensure to turn every 30-40 secs so that each ball is fried evenly.
