Recipes: Homemade Broth/Stock Over a course of a week or so, I keep a freezer bag in the freezer and I’ll add leftover veggies, skins from veggies I am using during the week, possibly vegetables that could be on the verge of going bad and of course the carcass of my rotisserie chickens from the week. When it comes time to make my stock, I use a large pot, add the bag of chicken and veggies, cover with water and add seasonings to taste. I like to add garlic powder, bay leaves, black pepper, bouillon (I like Better than Bouillon). Bring it to a boil and then let simmer on the stove top for a couple of hours. I drain the pot and keep the broth - it is amazing. Depending on how much I make, I also freeze in 1 quart bags for future recipes. Seriously there is nothing better than making your own stock - it makes everything taste better!!! King Ranch Casserole 2 Bell Peppers - I use red for the beautiful color 1 1/2 onion 3-4 stalks of celery Chop in small pieces - set aside Melt 1 stick of butter in dutch oven Add veggies and sauté for approximately 7 minutes Season with salt and pepper to taste) 2 Tsp. Chile Powder (heaping) Cayenne Pepper to taste After vegetables have cooked, add 3 large cloves of garlic (minced) 1 Cup of Flour - add small amounts at a time to blend with veggies 3 cups of broth - Blend the above mixture together When blended add: 3/4 cup of whipping cream 1 can Rotel tomatoes 1 7 oz. can chopped green chilies Let the sauce thicken and the flavors meld together and set aside. Use 4 cups of chopped/shredded chicken (I only like to use the breasts and thighs) and use rotisserie chicken, it takes about 1 1/2 rotisserie chickens to get this amount of chicken. 15 6” corn tortillas Cheese - lots of cheese. I probably used 1 pound of a variety - colby jack and cheddar mixed. Spray your 9x13 dish, shred your tortillas and layer in the pan, add sauce, cheese, repeat until the dish it completely full. Bake 350 degrees for approximately 40 minutes or until nice and bubbly. Let cool for a bit before cutting. Delicious!!!! Serves 10 - 12 Chicken Spaghetti Make the cream sauce identical to the King Ranch Casserole above. Except you add the following to it: 1 can Rotel tomatoes 1 small can chopped green chilies 1/2 can drained fire roasted tomatoes Pasta 1 lb. spaghetti noodles Use broth to boil your noodles in (you might need to add more water to the pot) Make sure to season with salt to give noodles flavor Boil according to package directions Chicken - 4 cups chopped rotisserie chicken Cheese 1 pound of cheese (Mozzarella & Cheddar) Once pasta is cooked, drain and pour noodles into the cream sauce pot, stir well and add cheese (about 12 ozs). Save some cheddar to put on top. Spray 9x13” baking dish and add the spaghetti mixture. Bake for 40 minutes on 350 degrees.
