Time: 90 minutes Quantity: 6 pieces Ingredients - dough: 150 g of potato starch 100 g of rice flour 50 g corn flour 50 g chickpea flour 1/2 cup brown powdered sugar 3 tablespoons of ground flaxseed 1 teaspoon instant yeast 150 ml of warm water 100 ml coconut milk 100 ml sunflower oil Ingredients - filling: 1 cup of blueberries 1 teaspoon of rice flour Ingredients - glaze: 1/2 cup brown powdered sugar 1-2 teaspoons of lemon juice Method of preparation: Mix all dry cake ingredients in a bowl and pour in water coconut milk and oil. Mix thoroughly and set aside in a warm place under a cover to let the dough rise and thicken. Wash the berries and dry them thoroughly. When the dough has risen we divide it into 6 parts and with hands dipped in oil form rectangles on a silicone pastry board. We mix the berries with rice flour. Place each rectangle in the palm of your hand and place a tablespoon of berries in the center, which we enclose in the dough like dumplings. Gently form oblong buns and place them on a baking sheet lined with baking paper. It is best to place them with the joint of the dough to the baking tray, so that the dough does not open while rising and baking. Put the baking tray into an oven set at 40°C to rise for about 20 minutes. Set the oven to 180°C and bake for about 25 minutes. During this time, we make the icing by pouring in a little lemon juice at a time until the consistency is just right. After removing the baked blueberries from the oven, wait until they cool slightly and spread them with the icing. Enjoy and cheers!
