Quiche is a French tart consisting of pastry crust filled with savoury custard and pieces of cheese, meat, seafood or vegetables. I am using chicken and mushroom filling which is my favourite and feels so light. Ingredients for crust 1-1/4 flour 3 tbsp cold butter 3-4 tbsp cold water. Method To make the pastry, tip the flour and butter into a mixer, and mix until its mixed and crumbly. Add 2-3 tbsp according to need cold water, then bring everything together with your hands until just combined. Roll into a ball and use straight away or chill for up to 15 minutes. The pastry can also be frozen for up to a month. Roll the pastry into a circle roughly 3mm thick on a floured surface, then use it to line a deep tart tin. Prick the base all over with a fork. line with a baking paper and fill with baking beans. Bake in oven for 15 minutes at 150c. After 15 minutes take out paper and baking beans and bake again for more 10 minutes. Now crust is ready . for chicken filling 1 cup boiled chicken 1 cup mushrooms few olives optional Method in a pan sauté mushrooms and add boiled chicken. Add salt and black pepper according to taste. sauté for sometime and filling is ready. cream filling 1/2 cup heavy cream 1 cup any cheese I like to use mozzarella 2 eggs spices-black pepper, salt, chilli flakes, dry basil. Method Mix everything in a a bowl and beat together. once pastry crust is ready sprinkle chicken mushroom over the base, pour over the cream mix. Bake for 20-25 mins until set and golden brown. Leave to cool in the case, trim the edges of the pastry, if required and serve it as it is or with salad.
