These fluffy chocolate pancakes are the perfect way for a chocolate lover to start their day! Fluffy and full of melty chocolate in each bite, this simple recipe gives you a good reason to get out of bed in the morning.INGREDIENTS 160g (1 ¼ cup) flour 40g (1/3 cup) cocoa powder 1 ½ tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 50g (1/4 cup) sugar 240ml (1 cup) milk 30g (2 tbsp) melted butter 1 egg 60g (1/3 cup) chocolate chips 120ml (1/2 cup) heavy cream 90g chocolate Cranberries for serving METHOD In a bowl whisk egg and sugar add milk, melted butter and whisk until combined. In another bowl mix together flour, cocoa, baking powder, baking soda and salt. Mix in the previous mixture. Stir in chocolate chips. Pour about 1/4 cup of batter for each pancake onto the hot pan with butter cook until bubbles start to form on the surface of the pancake, about 2-3 minutes from both sides. In a large bowl whisk egg and sugar, whisk until light and fluffy. Add milk, melted butter and whisk until combined. For ganache mix hot cream with chocolate. Pour the ganache on top of the pancakes.
