Thank you for watching! 💫 And don’t forget to subscribe here: https://goo.gl/mQwVjN **************************************************************************** Recipe : Mango Cheesecake Preparation Time: 40 minutes + chilling time Cooking Time: 5 minutes Serves: 5-6 Ingredients: Base: 150g digestive biscuits 80g butter Filling: 200g paneer 1 cup hung curd ½ cup sugar 1 cup mango puree 1 tsp vanilla essence 1 tsp lemon juice 2 tsp agar agar powder(China grass) 100g white chocolate Sauce: 1 cup mango ½ cup sugar 1 tsp agar agar powder Few drops lemon yellow colour To garnish: Whipped cream Mango chunks Mint leaves Method: Crush the biscuits and mix in the soft butter. Line a 7” springform pan with butter paper. Press the biscuit mixture on the base of the pan. chill for 30 minutes. Meanwhile blend together the mango puree, paneer, hung curd, lemon juice, vanilla essence, sugar to make a fine puree. Soak the agar agar powder in ½ cup water for 10 minutes. Cook on medium heat for 4-5 minutes with ½ cup water till the mixture is melted and glossy. Remove from heat. Blend in the mango mixture and mix. Mix in the chopped white chocolate and blend in. the mixture should be just warm. Add to the remaining mixture in the blender jar and blend till the smooth. Pour the mixture immediately over the set biscuit base. Smoothen the top and refrigerate for 2 hours. To make the sauce, soak the agar agar in ¼ cup water for 10 minutes. Cook with the mango puree, sugar till the mixture is glossy. Pass through a strainer to remove any lumps, keep warm. Pour the sauce over the set cheesecake and set in the refrigerator for 2 hours. Remove the cheesecake from the mould. Garnish with chopped mango pieces, whipped cream and mint leaves.
