We are often asked what we do with all the pine mushrooms we pick. (aka Matsutake mushroom) It used to be that we ate as much as we could while fresh and froze or dehydrated the rest. A few years ago I heard of a method of preserving them in jars from a friend who's grandma followed an old Italian process. This September 2019 I finally met said grandma and learned the process for myself. I learned that there is a lot of flexibility in the way you do it and the ingredients you use. Here is the method I use at the moment. I am sure it will change over time. I want to experiment with different ingredients as well. The Process 1. Wash and slice into bite size pieces. 2. Boil for 10-15 minutes with salt (and garlic if you want). Boil till there is foam and the water looks "slimy" or thickish as it runs off your stirring spoon. My guess it this is to thoroughly clean the mushrooms. 3: Strain out the mushrooms. 4: Mix half vinegar and half water. Enough to cover the mushrooms in the pot. Add more salt, garlic and hot peppers if you want. The ingredients are up to you. 5: Boil for 1 full hour. My guess is this pickles the mushroom pieces. 6: While it is boiling mix your flavorings into some olive oil. I used red hot peppers, jalapenos, purple onions, garlic, salt, cilantro and parsley. In the future I want to experiment with things like, basil, rosemary and oregano. 7: Strain out the mushrooms and try to get rid of as much water as possible. A salad spinners don't work that well. A press of some sort is best. Worst case wrap in cheese cloth and towels and press by hand like kneading dough. 8: Once cooled somewhat stir in all your flavorings and oil. 9: Add to jars. Small ones are more convenient when it is time to eat them and they make great gifts. 10: Top off the jars with olive oil (we use cold pressed, extra virgin olive oil. Not blended with other oils). Use a knife or shish kabob skewer and stab down the sides to allow the oil to fully reach all the mushrooms. 11: Add more oil if necessary. 12: Seal and store in a cool place. The lady who taught me kept hers in a second fridge but said a basement pantry would work as well. She gave me some that had been made 2 years earlier and it had not gone bad. Best served cold.
