Preheat your oven to 180°C (356°F). 2. Peel and slice the pumpkin, then place it in an oven-safe dish with brown sugar and butter. Cover the dish and bake for about 15 minutes, or until the pumpkin is fully cooked and soft. 3. Once slightly cooled, puree the pumpkin in a food processor. 4. In a bowl, mix the pumpkin puree with the other pumpkin layer ingredients using a hand whisk until smooth and well combined. 5. For the cheese layer, start by lightly mixing the cream cheese with sugar until the cheese softens. Then add the rest of the cheese layer ingredients and whisk by hand until smooth and creamy. 6. Line a round baking pan (about 18–20 cm in diameter) with parchment paper and press it gently to fit the shape of the pan. 7. Using a small ladle, alternately pour the pumpkin and cheese mixtures into the pan. 8. Finally, create a design on the top using a skewer or the tip of a knife. Bake in the preheated oven at 180°C (356°F) for about 40 minutes. 9. The cheesecake will rise to about 9–10 cm in height. It’s done when the center is set (it won’t wobble when you shake the pan) and the top is not sticky to the touch. 10.
