Yay! It’s Vlogmas! Join me this month for fun videos of knitting, cooking, baking, illustrations, & general merriment! Recipe for Chilaquiles (Serves 2!) Sauce: 3 guajillo chiles 4 cloves garlic salt to taste 1 small white onion, halved 1 bunch of cilantro 3 roma tomates 10 corn tortillas, cut into 1/8ths vegetable oil salt pepper garlic powder onion powder Toppings: Eggs Mexican Crema or Sour Cream Cilantro Make the sauce Fill a small pot with water and add the chiles, garlic, onion, and salt. Bring to boil and simmer for about 5 minutes. With a slotted spoon, remove the chiles, garlic, and onion and put into blender with a handful of cilantro and the tomatoes. Add 1/4-1/2 cup cooking water from chiles. Blend and add salt to taste. Set aside. Fill a heavy bottomed pan with about 1/2 an inch of oil and heat. You want the tortilla to immediately begin frying when you add it to the oil, otherwise they will absorb too much oil and end up mushy! Be patient! In batches, add a single layer of tortilla pieces to the oil until they begin to brown. They will continue cooking after being removed from the oil! Each batch needs around 1.5 to 2 minutes. Remove them from oil and lay them on a paper-towel lined plate and immediately sprinkle with salt, pepper, garlic powder, and onion powder. Continue until all the tortilla pieces are fried. When you've finished frying the tortillas, VERY carefully pour the oil into a small bowl OR grab a new saucepan and add about a tablespoon of oil. On medium heat, add the salsa to the pan and cook it down for about 5 minutes, then add your tortillas and toss to coat. Plate and top with eggs, sour cream, and cilantro. Enjoy!!!!
