Season the chicken with salt and let it sit uncovered in the fridge for at least an hour, or up to 12 hours. 2) Blend flamin hot cheetos with ½ cup of flour, cayenne, black pepper, garlic powder, and onion powder. 3) Add flour to one large mixing bowl. Whisk together eggs, hot sauce, and milk in another mixing bowl. In a third mixing bowl, add Flamin Hot Cheeto mixture. 4) Dry the chicken off well with paper towels. Dredge the chicken in flour, then egg wash, then Flamin’ Hot Cheeto breadcrumbs. Allow to sit in the fridge uncovered for an additional hour and save the excess cheeto crumb mixture. This will prevent the coating from falling off after you fry it. Equipment Cutting board Knife Plastic wrap Hot sauce bottle Plate Food processor 3 large mixing bowls Whisk Step 2: Slaw & Sauce Ingredients Slaw ½ head of cabbage ½ red onion 1 jalapeno 1 Tbsp red wine vinegar 1 Tbsp olive oil ½ tsp salt Comeback sauce 1 cup mayo 2 Tbsp ketchup 2 Tbsp hot sauce 1 Tbsp Worcestershire sauce 1 Tbsp creole mustard ½ tsp paprika ¼ tsp black pepper ¼ tsp garlic powder ¼ tsp onion powder 1) Thinly slice cabbage, red onion, and fresh jalapeno, then add to a large mixing bowl. Pour in salt, oil, and vinegar, and toss. Allow to sit in the fridge so all the flavors can mingle. 2) In another bowl, whisk together mayo, hot sauce, ketchup, worcestershire sauce, mustard, paprika, black pepper, garlic powder, and onion powder. Equipment 1 medium mixing bowl 1 large mixing bowl Knife Cutting board Whisk Spoon Step 3: Fry and Assemble Ingredients 1 plate coated chicken thighs 1 bowl Cheeto crumbs 1 quart vegetable oil 1 bowl slaw 1 bowl comeback sauce 12 large slices dill pickles 4 hamburger buns (or Kaiser rolls, whatevs) 1) Heat oil over medium heat to 325 degrees in a large cast iron pan (or use a deep fryer if you got one). You want the oil to be at least one-inch deep if using a pan. Remove the coated chicken thighs from the fridge and give it one last dredge in the cheeto crumbs, just to be safe. 2) Fry at 325 degrees for 8 minutes, then remove, and allow to drain on paper towels. 3) While the chicken is frying, toast your buns, just on the flesh side (like the opposite of the crust side lol). 4) On the bottom bun, lay down a hefty schmear of comeback sauce, and a handful of slaw. Add a fried chicken thigh, some pickles on top, and another schmear of comeback sauce. Top it with a bun and eat it. Equipment Cast iron pan Thermometer Tongs Griddle Paper towels 3 Spoons
